your bowl of goodness looks awesome Nikki! It remindes me of something my mother used to make when we had extra apples laying around. The big difference with what she would do is she used a cheese grater to grate the apples, usually mixing a few different types as one apple yeilds about a 3/4 cup of shreddings. She then added lemon juice to keep the apples from browning, cinnimon, raisins, walnuts, flax, and what ever other fruits and nuts were hanging about the kitchen. Brown sugar is good on top too :) I'm enjoying your blogs and your pictures look increadible! Love, Brittany
I'm Niki. I’m not a health professional but I’m passionate about living a healthy lifestyle, eating nutritious food and exploring the world. I love to travel and take my footsteps to as many places as possible. Rock climbing, white water rafting and photography are major parts of my life. I love the outdoors and being surrounded by beautiful landscapes and amazing people. I’m very passionate about eating healthy. I'm a vegan leaning towards the raw lifestyle. Cooking and baking is in my blood, so finding/creating new vegan/raw recipes is something to look forward to. I’m using this blog to journal my thoughts, pictures, and travels of my day to day life.
